Make some fish tacos for the holidays!

Chef Charles Howell’s Searcher Sportfishing Fish Tacos
Serves 4
Ingredients:
1 lb firm whitefish (yellowtail, dorado etc.)
Fish Rub
1 tsp chili powder
1/2 tsp cumin
1/2 tsp paprika
1/4 tsp cayenne pepper
1/4 tsp celery salt or Old Bay seasoning
Apple Slaw (See recipe below.)
Chipotle Mayo (See recipe below.)
Corn tortillas and lime wedges

Cut fish into 2 oz. strips and lightly coat with vegetable oil. Cover with rub and set aside for 15-20 minutes. Grill until done, yet still tender.
Warm corn tortillas. Place a teaspoon of Chipotle Mayo on each tortilla and then place a piece of fish in each. Top with Apple Slaw and serve with lime wedge.

Chipotle Mayo

Ingredients:
1/2 C mayo
3/4 teaspoon dried chipotle powder
1/2 teaspoon garlic powder
1 Tablespoon lime juice
1/4 teaspoon paprika
1/4 teaspoon salt
1/4 teaspoon pepper
Mix all ingredients together and store in refrigerator. Can be made several days ahead.

Apple Slaw
Ingredients:
1 pound green cabbage
1 Granny Smith apple
1/2 red onion
1/3 cup fresh cilantro, chopped
1/4 cup cider vinegar
1/3 cup vegetable oil
1/4 cup sugar
1 teaspoon Dijon mustard
salt and pepper to taste
lemon juice
Slice cabbage as thin as possible. Cut apple and red onion into 1/8 inch strips. Place cut apple in water and lemon juice to prevent browning. Whisk together vinegar, oil, sugar and mustard. Toss with cabbage, apple and cilantro.
Note: Don’t use red cabbage as it will turn the salad an unappetizing red.

Come down for the Let’s Talk Hook-up live broadcast (7-9 a.m.) with Pete Gray and Rick Maxa, and stay for the seminars and giant tackle sales!
Searcher will be at the dock for touring and there will be three seminars aboard: Surf Fishing at 9:30 a.m., Capt Art on “Intro to Long-range Fishing” at 12:15 p.m. and Fishermans Processing at 1:45 p.m.

Last day of fishing for 2013

Hello anglers: We are enjoying our final day of fishing for the 2013 season and are sorry to see it end. We are having great fishing for bluefin tuna. Most of the fish are 20 pounds and the method of choice is 30 pound mono with 30 pound floro and a 2/0 hook with a live sardine. Some folks did better with 25 pound line and floro. A few fish were landed on 40 pound line. John Avita from Arizona is pictured with one of the bluefin tuna he landed today.

Good fishing in yellowtail zone

Hello anglers: We had some action today in the yellowtail zone. Now has all the yellowtail they need. We are headed north to try for yellowfin tuna tomorrow. WAHOO!

Hello anglers: We set out today to find a kelp paddie with dorado and wahoo. We acomplished that goal by finding a kelp that had both wahoo and dorado. Everyone had a chance at landing a wahoo, and 8 out of our 14 passengers landed wahoo. John Nielsen landed three. We also had some nice size dorado with the wahoo  It was fun while it lasted. We are headed north again for more fishing time. We will be back in the yellowtail zone for a few hours in the morning and then travelling north again for the last day and hopefully some bluefin tuna. Team Searcher

Yellowtail action

Hello anglers: We are enjoying excellent yellowtail fishing this morning! Most of the fish are being landed on dropper-loops and a live sardine, with a few fish landed on yo-yo irons–Blue and white primarily. The James Gang is pictured each with a yellowtail from this morning.
Excellent weather no wind and sunny skies.
